    This Iced Oatmeal Cookie Bar recipe from Luis Diaz, REP Fitness Equipment Assembly & Facilities Technician, was the grand prize winner in the Great Purist Bakeoff — thanks to its indulgent taste and inviting macros for a post-workout treat. The secret ingredient? Purist® Whey Protein, vanilla flavor.

    Iced Oatmeal Cookie Bar Recipe

    Sliced Iced Oatmeal Cookie Bar.

     

    "It felt good when I heard, 'This reminds me of my childhood.'," says Diaz, who beat out the competition with his oatmeal cookie protein bar treat. 

     

    This entire recipe yields 36 servings, with the following macronutrients per serving:

     

    Calories: 128

    Protein: 2 grams

    Carbohydrates: 16 grams

    Fat: 6 grams

     

    Iced Oatmeal Cookie Bars

    Ingredients

    • 3/4 cup salted butter, softened
    • 3/4 cup brown sugar
    • 1/4 cup granulated sugar
    • 1 egg
    • 1 Tbsp canola oil
    • 1 cup all-purpose flour
    • 1/2 cup vanilla Purist® Whey Protein
    • 1 1/2 Tbsp cornstarch
    • 1 1/2 cups rolled oats
    • 1 tsp cinnamon
    • 1 tsp baking soda
    • 1/2 tsp salt


    Icing

    • 1/4 cup salted butter, softened
    • 1 Tbsp vegetable shortening
    • 1 1/2 cups powdered sugar
    • 1 tsp vanilla
    • 1–2 Tbsp milk


    Instructions

    1. Preheat oven to 350°F (180°C).
    2. Cream butter and sugars until fluffy.
    3. Mix in egg and oil.
    4. Add dry ingredients and mix into dough.
    5. Press into greased 9×13 pan.
    6. Bake 15–17 minutes until set.
    7. Mix icing ingredients until thick and smooth.
    8. Drizzle icing over warm bars.
    9. Let cool completely, then slice and serve.
